Healthy Thanksgiving Recipes: Serve Up Sides of Squash!

The followers of my blog, The Smart Kitchen, know me as Miss Smart, an amateur but creative cook whose focus is on easy, healthy cooking (despite her penchant for bacon and ice cream),Â and I have a simply smart solution: to any side dish conundrum you might be facing: serve squash.
I looked through the textbook of recipes from my culinary classroom (also known as The Smart Kitchen) and pulled four squash recipes that range from “easy” to “no thought required” in preparation. You can whip these up and impress your guests on Thanksgiving, or simply make them to enjoy throughout the fall and winter, when other vegetables look sad at the market, but winter squash abounds in its sweet or savory deliciousness.

The best thing? Most of these recipes can be adapated to any type of winter squash, as their consistencies tend to be nearly identical, and what tastes great with one type, as far as seasoning, usually goes well with another.
